Dal Bati Churma: It is most famous food of Jaipur. By mixing of three items it is made i.e Dal, Bati and churma. Dal is basically prepared from pulses, baked wheet ball is the bati and churma is made up by crashing the Chapattis and by mixing it with pure ghee and sugar. Churma is very sweet and it is basically served with daal and bati. It is cooked with pure ghee and sugar. It is basically made up of by smashing left over rotis in ghee or by wheat floor batis. Huge quantity of butter or pure ghee is used in this dish.
Ghewar: This is one of the sweet dishes of Jaipur. It is also known outside Jaipur also. Bascially it is prepare in the month of January during Makar Sakranti, for Gangour in March or April and on Teej festival in July or August. It is a deep fried sweet dish. Many varirites of ghewar are avalaible like: plain, Mawa or desi ghee. The best shops for this sweet are in Johri Bazar.
Bajre ki Khichdi: This dish is mostly prepared during winters as it helps in keeping our body warm. Its mild flavors and creamy consistency makes it a very delicious item. Bajra is a type of food grain which is the agricultural product of Thar Desert. Generally people eat its roti with molasses(gud) and fatless yogurt( Chachh).
The most famous item of Jaipur is Dal ki Kachoudi. You can have the best breakfast of Jalebi with Kachoudi. Kalmi bada, mogar, choula and sev and many other salted foods are famous in Jaipur.
Kadhi, Tinde ki sabzi, matar paneer, gate ki sabzi, mirchi ki pakori etc are also some of the vegetables famous vegetables of Jaipur. These all vegetables are made up by using a large amount of spices. Lots of oil or butter is used in preparing these dishes. The curries of Jaipur are very delicious and its taste is also different from other curries which are made in other states.
Traditional food available in Jaipur is very healthy, tasty and cheaper also. These are also known as desi food of Rajasthan. Dhudh ki phini and paneer ka ghewar are also very delicious dish of Jaipur. The sweets of Jaipur are as delicious as spicy food here. Other famous sweets of Jaipur are Rasgulla, badam ki barfi, mawe ki kachoudi, gulab jamun, Besaan ki chakki, churma, balushahi, mootichoor ke ladoo etc. Sweets are also an integral part of the Jaipur food.
